Hey Janah! i just remembered that you were a vegetarian in high school. I bought extra-firm tofu the other day. I don't really like the looks of any of the recipes I've seen. Do u have any recommendations?

Here was my response:
Hey Natalie!
Great to hear from you! Tofu is definitely something that can be incorporated into pretty much any meal.
1. Cut the tofu into bite sized pieces and if you have a convection oven, crisp them in the oven, if not you can use a sautee pan and crisp them that way. Do this by spray the pan with PAM or using just a bit of olive oil. Set the pan on medium-high and toss the tofu in. They will begin to get crispy. Serve it with risotto/couscous, stir-fry veggies or even in a taco salad or burrito.
2. Or you can add the tofu to lasagna by mashing up the tofu into the ricotta cheese. You can hardly taste the tofu once its in the lasagna. gives you an extra umph of protein! To add extra flavor, add in fresh basil or arugala!
3. Or marinate the tofu in a soy/peanut sauce then crisp it the same way you would the other tofu.
