“Strawberries & Cream…I need it ‘cause you know that I’m a fiend”- Vanilla Cake with Fresh Whipped Cream and Strawberries
While visiting my sister in Los Angeles, she had me cater her birthday party.  My sister was pretty easy going when it came to planning the menu, but she insisted that I recreate a cake she saw at Joan’s on Third.  We ventured over to Joan’s to take a look at this cake that she wanted me to make.  At first sight, I thought to myself that it was basically a strawberry shortcake, which to me is a little boring.  But, it was her birthday, so I agreed to recreate the cake.  Boy was I glad that I did!  It was one of the best cakes I’ve ever had.
What You Need:
1 Box Vanilla Cake Mix (ok, so it’s semi-homemade)
1 Quart Heavy Whipping Cream
2 Tsp Vanilla Extract
1/2 Cup-3/4 Cup Powdered Sugar (I like my Whipped Cream very sweet)
1 Box of Strawberries (Washed and chopped)
1. Make cake according to box directions.  Be sure to cool the cake completely (best on cooling rack) before adding cream topping.
2. For the whipped cream topping, pour the quart of heavy whipping cream into a large bowl.  Add the vanilla and powdered sugar.  Using a hand mixer, whip the cream until it becomes thick.
3. Then, combine about 1/2 of the whipped cream with 1/2 of the chopped strawberries.  Spread this mixture on one of the cooled cakes.  Then place the second cake on top of the strawberry and whipped cream mixture.  Then cover the entire layered cake with the whipped topping.  Use the other half of the chopped strawberries to line the middle part of the cake.
4. Create a design with remaining stawberries to decorate the top and sides of the cake.

*Keep the cake in the fridge until ready to serve.
