“One Hot Tamale” Homemade Low-Fat Vegetarian Tamales
As many of you know from previous posts, I love tamales.  When dining at a Mexican restaurant, most Tamales are non-vegetarian.  Also, a lot of tamale recipes are made with lard or chicken stock.  The Delish Your Dish version is 100% vegetarian and 100% low-fat.
What You Need:
1 1/2 Cups Maseca or Maseca Tamales
2 Cups Water
PAM
1/2 Cup plus 2 tbsp Salsa
1 Cup Morningstar Farms Crumbles
1/2 Cup Frozen Chopped Onions
3/4 Cup Black Beans
Shredded Mexican Cheese
2 tbsp Onion Powder
1 tbsp Garlic Salt
Sugar
Dried Corn Husks (find them most local markets or Mexican specialty stores)
1. Soak the dried corn husks in bowl of water for about 10 minutes.  Meanwhile, in a large mixing bowl combine the Maseca, Sugar, Water, Onion Powder and Garlic Salt and 2 tbsp of salsa.  The mixture should not be watery, but should be easy enough to spread.
2. Next, grease a sautee pan with PAM and set on low-medium heat.  Add frozen chopped onions, crumbles, black beans and 1/2 cup salsa.  Heat in pan until the onions begin to slightly brown.
3. Time to assemble the tamale.  This is best shown through a video.  I watched this youtube video to teach myself how to roll a tamale.  Before spreading the masa mixture on the corn husk, lightly spray it with PAM.
4. Next, spoon the crumbles mixture into the center of the masa mixture.  Top with cheese.

5. Roll the tamale like it was shown in the video.
6. Then, rolled tamales in a microwave safe steamer (you can use a steamer on the stove as well).  Be sure to put some water in the bottom of the steamer.  Steam the tamales in the microwave for about 15-20 minutes.
Serve with fresh salsa, guacamole and a side salad.
*For those of you not familiar with Tamales, be sure not to eat the corn husk.  Carefully unroll the tamale from the husk to eat.
**Omit cheese for a vegan friendly dish!
