“‘Cause I’m Free…Free Forming”- Free Form Strudel with Boozy Apple Filling
The other night my friend Jen and I played “Trash or Treasure” with a few of the ingredients we could scrounge up from both of our kitchens. After a delish meal of sweet potato and beet mash, Field Roast Vegan Meatloaf, sauteed kale and roasted brussel sprouts, we had just enough room in our bellies for some dessert.
My contribution to our dessert were a few beautifully ripe apples and Jen had some Filo Dough that needed to be put into use. So we got to thinking and came up with a free form strudel. It…Was…GLORIOUS!
Now, I have to warn you that the ingredient measurements for the dessert may be a little off due to the fact that we were just playing around.
What You Need:
Filo Dough (thawed)
3 Apples (diced)
Agave (to taste)
Cinnamon (to taste)
Nutmeg (to taste)
Lemon Juice and Zest (to taste)
Dark Rum (to taste)
Maple Syrup (to taste)
Cinnamon Sugar (to taste- for Filo Dough)
Heat oven to 400 degrees.
1. In a medium bowl, combine the apples, cinnamon, nutmeg, lemon juice, zest, agave, maple syrup and rum. Toss to coat and set aside.
2. Meanwhile, cut the Filo dough into 4” by 4” squares. Spray a cookie sheet with Non-Stick spray. Next, lay one sheet of the filo dough squares on the sheet and spray with the non-stick spray. Sprinkle cinnamon sugar. Then repeat steps until you have about 5 layers. Make enough stacks so that each dessert has two stacked layers.
3. Place tray in the oven for about 7 minutes or until filo has crisped and just browned slightly. Remove from oven and set onto a cooling rack.
4. While the Filo cools, heat a large skillet on medium heat. Spray with non-stick spray and add in the apple mixture. Saute the apples until they are tender. Adjust rum and spices to your liking.
5. Remove from heat and begin to add the apple mixture to the top of a Filo stack. Once you’ve added the filling, top the apple mixture with another stack. Garnish with whipped cream and cinnamon or serve with a side of vanilla ice cream.
