“Fruit Bread Gone Nuts” Low-Fat Mango, Banana Walnut Bread
I had a great delivery at work yesterday.  Some people get sent flowers, chocolates or some sort of dessert at work.  I on the other hand get something a little different.  My Aunt Sue made a special delivery to me yesterday that happened to make my day.  She brought me a giant bag of fresh mangoes that she had picked from her tree. So this morning I decided to put those mangoes to good use and make some killer Mango, Banana Walnut Bread.
What You Need: (Recipe Adapted from Here)
2 Cups All-Purpose Flour
2 Tsp Baking Powder
1 Tsp Baking Soda
1/4 Cup Vegetable Oil
1/4 Cup Applesauce
1/2 Cup Sugar
3 Bananas
3 Egg Whites
1 Cup Diced Mango
1/4 Cup Chopped Walnuts
Set oven at 350 degrees.  Lightly grease loaf pan (or mini loaf pans)
1. In a bowl, mix flour, baking soda and baking powder together.
2. In an another bowl, combine sugar, egg whites, oil, applesauce and 3 mashed bananas.  Then slowly add the banana mixture to the dry ingredients.  Mix well.
3. Then fold in the diced mango and walnuts into the mixture.  Mix well.
4. Pour batter into the loaf or mini loaf pans.  Place in oven for 1 hour for the loaf pan, or 35 minutes for mini loaf pans.  Use toothpick to check and see if the bread is done baking (toothpick should come out clean)

*The next time I make this recipe I would add more mango and omit the oil.  I would use applesauce or yogurt instead.
