“My Muffin Top is all that…” Low-Fat Blueberry Corn Muffins
This was quite a weekend of baking and cooking in the Delish Your Dish house. I made a huge batch of homemade veggie burgers, homemade bran muffins and today’s blueberry corn muffins. This recipe is a work in progress, but still turns out a nice low-fat blueberry muffin.
What You Need (Adapted from Here):
1 Cup All-Purpose Flour
1 Cup Corn Meal
2 Tsp Baking Powder
1/2 Tsp Salt
1/4 Cup Sugar
2 Egg Whites
1 Cup Skim Milk
1 1/2 Cups Blueberries
1/4 Cup Unsweetened Applesauce
Heat oven to 400 degrees
1. Mix together all the ingredients in a large bowl or mixing cup. Fold in the blueberries so they do not fall apart.
2. Pour mixture into greased muffin tins. Place tray into oven from about 15 minutes.
3. Be sure to check with a toothpick to make sure the muffins are completely baked.
*I think next time I would try to see how vanilla yogurt would work instead of applesauce and maybe throw some ripe bananas into the mixture as well.
