“I Like To Eat, Eat, Eat Apples…” Baked Apples Stuffed with Rum Soaked Raisins, Dried Plums and Walnuts
Being that this was my first baked apple…ever, I’d say it came out pretty darn good. Actually, it was delicious. It was sweet and had just a hint of rum flavoring in the background. This will definitely be on my menu for the next big family get together.
What You Need (For 2 Apples):
2 Apples Cored (I used 1 Fuji and 1 Granny Smith)
1/2 Cup Chopped Walnuts
1/2 Cup Raisins
4 Dried Plums (chopped)
2 Tbsp Maple Syrup
1 Tbsp Brown Sugar
1 Tbsp Cinnamon Sugar
1/2 Tbsp Rum
Set Oven to 350 Degrees
1. In a small bowl, combine the raisins, dried plums and maple syrup. Allow the the mixture to sit for about 10 minutes or so. Then add in the brown sugar, walnuts and cinnamon sugar.
2. Once the mixture is completely mixed, pack it into the center of the apple. Place the apple into a greased baking dish. Place the dish in the oven for about 25 minutes or until the apple has become soft.
3. Remove from oven and serve with a side of ice cream (my new favorite is Edy’s Pecan Praline Yogurt- it’s seriously delish!)
