“French Toast with the Most” Cinnamon French Toast Stuffed with Grilled Bananas, Peaches and Granola then Topped with Blueberry Syrup
While I was living in Gainesville (Go Gators!), my friends and I used to go to a place for brunch called Jeff’s New York Deli after a night of partying. I never had the pleasure of having his stuffed french toast, so today I thought I’d create my own little stuffed french toast creation.
What You Need: To make 1 Serving
2 Slices of Whole Wheat Bread or Double Fiber Bread
4 Egg Whites
1 Tsp Vanilla Extract
2-3 Tbsp Skim Milk
1 Tsp Cinnamon Sugar
1 Banana (Sliced on an angle)
1 Peach (Sliced thin)
1/2 Cup Blueberries
3 Tbsp Maple Syrup
1/4 Granola (I used my homemade granola)
1. In a shallow bowl (large enough to fit your bread), add in the egg whites, vanilla extract, milk and cinnamon sugar. Mix and set aside. In a small measuring cup add the blueberries and maple syrup. Heat in the microwave for 1 minute. Set aside.
2. Grease a griddle or pan on low heat. Add the sliced bananas and peaches to the heated pan. Grill the fruit on both sides until they have lightly browned. Set aside. Turn the heat off and allow the pan to cool for just a moment.
3. While the pan is cooling, add the bread to the egg mixture. Allow the bread to soak for about 20 seconds on each side. While the bread is soaking, re-heat the pan and spray with PAM. When the pan is heated, add the slices of soaked bread. Cook on both sides so that the egg mixture browns on both sides.
4. Then place 1 piece of bread on the plate and top with the bananas, peaches and granola. Then place the next piece of french toast on top of the fruit/granola mixture. Finish it off with the blueberry syrup (you may want to re-heat the syrup in the microwave for 30 seconds).
