“Hawaii 5-0 Waffle”- Belgian Waffle with Toasted Coconut, Grilled Bananas and Pineapple
The waffle recipe contest is ending on July 4th, so I just wanted to post a friendly reminder to send in your best waffle recipe to my email.  If you have what I think is the best waffle recipe, you will win an Edgecraft Waffle Iron.
Today’s waffle recipe is a creation of mine that I had yesterday morning.  I’ve gotten some really interesting recipes in, so be sure to send your recipe my way.
What You Need:
Belgian Waffle Mix (Store bought or homemade)
2 Pineapple Rings
1 Banana (sliced on an angle)
Mango Preserves
1/4 Cup Sweetened Coconut
Macadamia Nuts
1. If you have a waffle iron, pre-heat the iron.  Mix the waffle batter according to the package.  Pour the batter onto the greased heated waffle iron.  Cook the waffle according the directions or desired texture.
2. In a pan, pour about 1/4 cup of coconut into a heated pan.  Toast the coconut so that it lightly browns.  Set aside.
3. Grease the pan with butter flavored PAM.  Add the pineapple rings and bananas to the pan.  Cook the fruit until it browns on both sides.
4. Pour about 1/4 cup of mango preserves into a microwave safe dish.  Heat the preserves for about 30 seconds.  Then assemble waffle by adding the pineapple, bananas, toasted coconut and top with the warmed mango preserves and macadamia nuts.

*If you don’t have a waffle iron, you can use store bought waffles (Eggo, Kashi) and just use the toppings.  Or you can send in a great recipe and win a waffle iron!
