“This Sh*t is Bananas, B-A-N-A-N-A-S” Low-fat Cinnamon Banana Walnut Muffins
Waking up to the smell of freshly baked muffins is the best…to bad I didn’t get to experience it because I was the one in the kitchen baking at 7am this morning.  I’m hoping that someone in my house is kind enough to bake for me one morning.  But, I guess I can’t complain too much because I absolutely love being in the kitchen baking up a storm.  Today’s recipe was inspired by one of my favorite websites, Nosh With Me.  Enjoy!
What You Need:
For the Batter:
4 very ripe bananas
1 1/2 Cups All-Purpose Flour
3/4 Sugar
1 Tsp. Vanilla
1 Tsp. Baking Soda
1/2 Tsp. Baking Powder
2 Egg Whites
4 Tbsp. Unsweetened Applesauce
1 Tsp. Cinnamon
For the Streusel Topping:
1/4 Cup Oatmeal
1/4 Cup Brown Sugar
2 Tbsp. Flour
1 Tbsp. Butter
Set Oven to 350 Degrees.
1. Mash bananas in a bowl.
2. Add all of the other ingredients for the batter and mix well.  Pour into muffin tins.
3. To make the streusel topping, combine the flour, brown sugar and oatmeal together.  Cut in the butter and mush it between your fingers until it becomes crumbly.  Sprinkle the topping onto the batter than was poured into the tins.
4. Bake at 350 degrees for 13-15 minutes, or until a toothpick comes out clean when you insert it.
