“Here Come the Hot Peppers”-Stuffed Jalepeno Peppers
Let’s call this the healthier version of Jalepeno Poppers.  I’ve always wanted to try them, but I do my best to keep my fried food consumption to a minimum…most of the time.  When I bought a pound of jalepenos from the farmers market the other day, I knew that I wanted to try making my own version of jalepeno poppers.
What You Need:
Jalepenos (Slice off top just enough that the cap stays on, remove seeds)
3/4 Cup Corn Meal
3/4 Cup Canned Corn (use the liquid from the can as well)
1 Lime
1/4 Cup Cream Cheese
1/4 Cup Cheddar Cheese
1/4 Black Beans
Set Oven to Broil.
1. Combine all the ingredients in a small bowl and mix well.  If the mixture seems too ‘wet’, add a bit more corn meal.  Then, using a spoon, stuff each jalepeno with the corn meal mixture.
2. Place the stuffed peppers into a greased baking dish.  Allow the peppers to cook until the outside as become soft and blistered.  Keep an eye on them because each oven is different.

*You can also slice the jalepeno lengthwise (do not cut all the way through- just enough to remove the seeds).
