“Feed Your Brain”- Why Vegetables Are the New Meat (NY Mag)
I was catching up on my New York Magazine reading this weekend and stumbled upon this amazing article and thought I’d pass it along to you fine folks.
For years I’ve been saying how restaurants should be focusing more on giving vegetables their chance to shine in the spotlight. Finally, chefs are spending the time to create incredible menu items that push the meat aside and show the versatility of vegetables.
As a chef and cooking instructor, I’ve come across a ton of people that claim to be minimizing their meat intake per week and are doing their best to follow a more veg-friendly diet. I, of course, am a big supporter of this.
Being that I am a vegetarian in the restaurant and food industry, I couldn’t be happier that select chefs and restaurants are starting to cater to those who are seeking vegetarian dishes.
