“Why Do You Build Me Up, Build Me Up, Phyllo Cup Baby”- Homemade Cinnamon Sugar Pyhllo Cups with Ice Cream and Drizzled Peanut Butter
After dinner I’m usually looking for something sweet to munch on. In my house, we’re always stocked with ice cream and dark chocolate. It’s a rare occaision that we have anything other than these two choices. But, last night I put my foot down. I needed something to accompany my single scoop of ice cream. So in an effort to spice things up a little bit, I decided to throw together a an easy dessert. In about 10 minutes I felt like I was eating dessert at a restaurant.
What You Need:
10 Sheets of Phyllo Dough (thawed)
Cinnamon Sugar (to taste)
PAM (butter flavor)
Ice Cream (you’re choice)
2 Tbsp Peanut Butter
Chocolate Chips
Set Oven to 350 degrees.
1. Grease a cookie sheet. Place 2 small ramekins face down onto the cookie sheet and grease with PAM as well. Set aside.
2. Roll out the phyllo dough and set aside 10 sheets. Spray 1 sheet of phyllo dough with PAM and sprinkle with cinnamon sugar. Fold the phyllo dough in half and place onto one of the ramekins. Mold the dough so that it tries to hold onto the ramekin. Repeat so that you have about 5 layers of the greased phyllo sheets sprinkled with cinnamon sugar. It’s a good idea when you’re putting the phyllo dough on the ramekin that you don’t line the sheets up each time, this way you’ll get a cute design. Spray the final sheet on top with PAM.
3. Repeat for the 2nd ramekin.
4. Place in the oven for about 10 minutes or until crispy. Remove tray from oven and allow to cool for a few minutes before trying to remove from the ramekin. Once they’ve cooled, place them onto your desired serving plate. Set aside.
5. Melt about 2 tbsp of peanut butter in the microwave for about 30 seconds. Then scoop 1 scoop of ice cream into the phyllo cup. Finish it off by drizzling the melted peanut butter and sprinkle with chocolate chips.
