“Two For The Price of One” Fried Egg Pancake
You know those times where you really can’t decide what to have for breakfast?  You stand there in your pantry or in front of the fridge just going back and forth between whether or not you want cold cereal, oatmeal, eggs etc.  So to solve all your decision making problems, why not just get two favorites rolled into one delish dish?
What You Need:
Pancake Batter (your choice)
1 egg
Butter
1. Prepare pancake batter according to package directions.  Scoop the batter into an empty squeeze bottle, pastry bag or ziploc bag (with corner cut) so that you can create whatever design you want.
2. Heat the pan on low heat and grease with butter.  Wait until the pan is very hot before you add the pancake batter.  Use the squeeze bottle to form any shape (i chose a heart) and leave a space in the middle to drop in your egg.
3. Once the batter starts to cook, drop the egg into the center and allow it to cook.  To help, place a lid over the pan so that the egg begins to cook.  Once a white film covers the yolk, flip the pancake over so that it can continute to cook.
4. Serve with berries, syrup and your favorite pancake toppings.
*I’m heading to one of my favorite places this weekend.  I’m heading to Gainesville to watch the Gators kick some butt!  If you’re going to be in Gainesville let me know!
