“Where’s The Beef?”- Vegan Asian Tacos
Whenever I go to LA, my sister and I always try to track down the Kogi BBQ food truck. Unfortunately, each time we’ve tried to chase down the truck, something always seems to come up…which leaves us taco-less.
So last night when I was digging through the fridge, I came across some corn tortillas, leftover stir-fry veggies and Gardein Beefless Tips. I immediately thought to myself, “If I can’t get Kogi BBQ, I’ll have to create my own Kogi BBQ”.
What You Need:
Gardein Beefless Tips
Stir-fry Veggies (pre-packaged)
Sweet Chili Sauce (to taste)
1/4 Cup Chopped Almonds
Crushed Red Pepper Flakes (to taste)
Lime Wedge (optional)
1. Steam stir-fry veggies according to package. Set aside. Then, add the beefless tips to a microwave safe dish and defrost for about 1 minute. Next, heat a small saute pan on low and grease with PAM. Add the defrosted beefless tips to the pan with 1 tbsp. of sweet chili sauce. Saute for about 2-3 minutes and make sure the beefless tips are coated in the sauce.
2. Then, take a few corn tortillas and place them on a paper towel. Pop them in the microwave for about 30 seconds. Place the veggies back in the microwave just to reheat. Then start constructing your tacos. Place the beefless tips, veggies, almonds, crushed red pepper, sweet chilli sauce and a squeeze of lime juice.
*This is a really quick and easy meal…especially if you’re using the microwave. You can use the microwave to cook the beefless tips instead of making it in the pan if you want to avoid a mess.
