“Spice Up Your Life”- Fresh Pico de Gallo
This week my girlfriend and I created what I think are the best homemade veggie burgers.  We needed a topping that was fresh, delish and spicy to accompany our superb veggie burgers.  After rummaging through our fridge, I realized I had the ingredients to make pico de gallo.  Nothing like spicing up your weeknight dinner with a little fresh pico de gallo.
What You Need:
1 Box Campari Tomatoes (Chopped and seeded)
1 Small White Onion (chopped)
Juice of 1/2 Lime (if you feel you want more lime flavor, add extra)
2 Jalapenos (chopped and seeded)
2 Tbsp Fresh Cilantro (chopped)
1 Tbsp Red Wine Vinegar
1. Toss all ingredients together into a medium size bowl.  Fold the componets together.  Place in fridge to cool until ready for use.
