“Ain’t no Houdini but this is Veggie Chicken Scallopini” - Vegetarian Chicken Scallopini with spinach, mozzarella and mini-ravioli
I’m a big fan of Gardein brand products and they just came out with a new product called Chicken Scallopini. This is a quick fix dish you can make after work in just 20 minutes.
Here’s what you will need to make this dish yourself:
Gardein Brand Chicken Scallopini
3/4 cup Marinara Sauce
2/3 cup cooked spinach
1/2 cup shredded Mozzarella Cheese
Serve with side of Trader Joe’s Mini Ravioli
Set oven to 400 degrees.
1.  Cook ravioli according to package directions. Set aside.Then, heat and grease a small skillet on medium heat.
2.  Once the pan is heated, add in the chicken scallopini. Brown the “cutlet” on both sides.
3.  Next, grease a small baking pan.  Place the “cutlet” in the pan and top with marinara, spinach and cheese. Place the dish in the oven for about 10 minutes. Serve hot with mini ravioli.
