“Sock It To Me”- Socca Cakes with Goat Cheese and Agave Nectar
Let me guess, you’re wondering what the heck a Socca cake is?  Well, I thought the same thing the first time I heard of it too.  I happened to first come across Socca cakes in West Hollywood at Cobras and Matadors.  This tapas restaurant had me licking my plate clean when I ordered these delish ‘cakes’.
So last night I decided to try and recreate this amazing dish.
What You Need:
1 Cup Chickpea Flour (I used Bob’s Red Mill)
3 Tbsp. Sugar
1/2 Tbsp. Salt
Pepper to taste
Agave Nectar (or use Honey)
1 Tbsp. Oil
1/2 Cup Water (add more as needed-should create a thick pancake type batter)
1. Combine all ingredients and stir very well.  Let the mixture rest for about 10 minutes.  Then, heat a greased skillet on medium heat.
2. Once the skillet is heated, spoon the mixture into the heated  pan to create ~2 inch circles.  Allow the ‘cake’ to brown on both sides.  Remove from pan and repeat until you’ve used all of the batter.
3. Plate the hot cakes onto a plate and top with crumbled goat cheese and Agave nectar.  Serve immediately and enjoy!

*If you wish, add rosemary and garlic salt to the mixture for a more savory flavored cake.
