“Sababa Salad”- Israeli Salad
Despite my severe case of jet lag, which has caused me to be dragging my feet the past few days, I promised to give you all a dose of Israeli cuisine. While traveling in Israel for two weeks, I pretty much had some version of this salad at every meal (yes, including breakfast).
The salad is great with hard boiled eggs and toast for breakfast, as a side salad or perfect for topping off your falafel sandwiches.
What You Need:
1 Cucumber (diced-medium sized cubes)
1 Large Tomato (seeds removed- diced medium size)
1/2 Cup Crumbled Feta
1 Small Onion (diced)
2 Tbsp. Olive Oil
2 Tbsp. Lemon Juice
Fresh Cracked Pepper (to taste)
Garlic Salt (to taste)
2 1/2 Tbsp. Fresh Dill (plus more to garnish)
1. In a medium bowl combine the cucumbers, tomatoes, onions and feta. Set aside.
2. Then in a small bowl whisk together the olive oil, lemon juice, pepper, dill and garlic salt. Pour the dressing on top of the cucumber mixture. Fold the ingredients together and allow to chill.
