“There’s An App For That”- Crostinis Topped with Goat Cheese Pesto, Mushrooms, Tomatoes and Fig Balsamic
So Super Bowl is right around the corner and I’m sure many of you have already started planning your menus.  But, since we still have some time to make a few changes to that menu, why not try out this great recipe and add it to the list.
What You Need:
1 Baguette (sliced and lightly toasted)
2/3 Cup Crumbled Goat Cheese
1 1/2 Tbsp. Lemon Juice
Water (as needed to thin the mixture)
1 Clove Crushed Garlic
3-4 Large Basil Leaves
1 Pkg. Sliced White Mushrooms
1/2 Onion (diced)
3/4 Cup Diced Tomatoes (seeds removed)
Fig Balsamic
Garlic Salt (to taste)
Italian Seasoning (to taste)
1. In a medium bowl, combine the goat cheese, lemon juice, basil, crushed garlic and water.  Using a hand blender, whip the ingredients until it forms a creamy mixture. Set in the fridge to cool.
2. Then, grease a small pan and set on low heat.  Once the pan is heated, add the onions.  Cook the onions until they become tender and clear, then add the mushrooms.  Season with garlic salt and italian seasoning.  Allow the mushrooms to cook down until they are tender.  Set aside.
3. Set the toasted crostinis onto a tray.  Use a spoon to spread the goat cheese mixture onto each crostini and top with the mushrooms and tomatoes.  Then, place the tray into the oven set at 300 degrees.  Just allow the crostinis to warm (about 5-10 minutes).  Remove from oven and drizzle with fig balsamic.
