“Everybody Get Your…Rolled Oats On”- Apple Cinnamon Banana Oatmeal with Almond Butter
Life as a foodie leads me to become a little obsessed with food…okay, a lot obsessed.  There are certain foods I tend to obsess over a little more than others, one of those foods is old-fashioned rolled oats.  There’s nothing better than waking up in the morning and making myself a bowl of thick-cut rolled oatmeal.  This recipe is a new favorite of mine!
What You Need (Serves 1):
1/2 Cup Thick-Cut Old-Fashioned Oats
1/2 Cup Apple Juice (I prefer unfiltered from Trader Joe’s)
3/4 Cup Water
1/3 Banana (sliced)
1 1/2 Tsp. Cinnamon
2 Tsp. Almond Butter
Almond/Soy Milk (optional)
1. Pour everything but the almond butter and milk into a medium pot.  Set it to low-medium heat.  Bring the oatmeal to a boil and then lower the heat to a simmer.  Allow the oatmeal to cook for about 15 minutes or its to your desired readiness.
2. Place a dollop of almond butter in the bottom of a bowl, then pour the oatmeal on top.  Then, add a splash of milk to the top of your oatmeal and enjoy!
*You can swap out the bananas for apples if you like.
