“Reuben, Reuben I’ve been thinking”- Tempeh Reuben
What you need:
Tempeh 
Rye Bread
Honey Mustard
Swiss Cheese (I like to use Jarlsberg Lite- it has much less fat and calories)
Sauerkraut
1. Cut tempeh horizontally into thin strips.  Place them on a cookie sheet and put into a convection oven at 400 degrees.
2. Keep an eye on the tempeh, you dont want it to get too crispy.  Should take about 15 minutes.  Take 2 slices of rye bread and spread honey mustard.  Place cheese on both halves of the bread. Add tempeh.
3. Heat sauerkraut in microwave until hot.  Put the kraut on the sandwich and put both halves together.  Place sandwich in panini maker/on a hot grill pan/or regular pan.  Allow both sides to brown.
4. Eat and enjoy.  I promise this sandwich is addicting.
