“The Whole Enchilada”- Fajita Enchiladas
What you need:
White Corn Tortillas
Refried Beans
Store bought enchilada sauce (I really like Target brand)
Salsa (Newmans Own or Pace works)
Small onion (yellow or white)
1 Bell Pepper (any color)
White mushrooms (sliced)
Vegetarian Crumbles (Morningstar Farms Meal Starters is what I use)
Mexican Blend Cheese (Kraft 2% is what I use)
1. Set oven to 400 degrees. Slice onion into semi-circles. Heat a small pan, spray with PAM, add onions. While onions are cooking, cut the pepper and mushrooms. Once onions have cooked down, add peppers, let them cook down, then add mushrooms. Next, add the Morningstar Farms crumbles to the vegetables and cook for about 5 minutes.
2. Heat refried beans in microwave safe dish for 2 minutes. Place tortillas in a damp paper towel and microwave for about 1 minute or until soft. Take can of enchilada sauce and mix in some of the refried beans to thicken the sauce. Spread some of the sauce in the bottom of a oven safe casserole dish.
3. Take a tortilla and add the beans, veggies/crumbles and mexican cheese. Carefully roll each enchilada and place in casserole dish with the seam side down. Fill casserole dish and top with the enchilada sauce. Finish with mexican cheese.
4. Place in preheated oven for about 20 minutes. Enjoy with sour cream, lime or guacamole.
