Mid-Day Delish Dish
I know some of you may be stuck in a rut when it comes to figuring out what to have for lunch. Some of you may even just resort to eating boring yogurt and fruit, or even splurging and going out for lunch.
When it comes to lunch, I don’t mess around. I spend most of my morning looking forward to my lunch, and I don’t waste it on a boring selection. Hopefully I can help you by giving you some of the ideas that I use when making my lunch.
Today I had an incredible sandwich. I’m a huge sandwich fan, so when it comes to making one, I don’t just throw two pieces of bread together and call it a day.
Today’s Delish Sandwich:
English Muffin (Thomas’s Double Fiber Honey Wheat)
Amy’s California Veggie Burger
Sliced Tomato
Fresh Iceberg Lettuce
Sliced Avocado
The key to this sandwich is that I put it all together at work. The veggies were pre-sliced at home and put in a plastic container. The frozen veggie burger and the english muffin were seperate as well. I toasted the burger and muffin then put the veggies on top. It was DELISH! Hope you enjoy!
*I always pack a fresh fruit to accompany my lunch, today it was a Fuji apple.
