“Oh My Focaccia Pie”- Homemade Focaccia with Roasted Garlic
Yesterday while I was driving to home depot (don’t laugh), I took a notepad and started coming up with ideas of what to cook this week with what I have in my fridge. I knew I had some left over roasted garlic to use, and I came up with this recipe. My parents and I LOVED it. It was hard not to eat the entire pie. I hope you all enjoy it as much as we did!
What you Need:
Pizza dough (either store bought or homemade-recipe follows below)
Red Onion
Roasted Garlic (I made this a day in advance)
Parmesan Cheese
Fresh Mozzarella Cheese
Sugar
Dried Rosemary
Tomato (sliced thin)
Garlic Salt
Onion Powder
1. Set oven to 500 degrees.
2. Take pizza dough and add about 1 tbsp of dried rosemary, 1/2 tbsp of garlic salt, 1/2 tbsp onion powder and mix it into the dough.
3. Roll dough out onto a floured surface. As you can see in my picture my dough was not a perfect circle, so don’t worry about being a perfectionist.
4. Bake the dough on a pizza tray or pizza stone until it is starting to brown (10 minutes or so)
5. Slice red onion, and throw into a greased (PAM) sautee pan. Add about 1/2 tbsp of sugar to the onions. Cover with lid and stir every few minutes. The onions should begin to carmelize.
6. Remove dough from oven and carefully spread the roasted garlic to cover the entire pizza. Add onions, sliced tomato, shaved parmesan cheese and fresh mozzarella.
7. Place back in the oven until the cheese begins to melt.

Pizza Dough Recipe (I found this recipe on another site but added a little to it)
.25 ounce package of active dry yeast
¼ teaspoon sugar
¾ cup of warm/hot water
1 ¾ cup flour
½ teaspoon salt (I use garlic salt/onion powder)
and I add Italian seasoning or Dried Rosemary too
-Preheat oven to 500
-Dissolve yeast and sugar in hot water, allow to rest for 8 minutes
-In a separate bowl, combine flour, salt and seasonings
-Pour yeast mixture over flour and mix with heavy spoon
-Knead and work dough on a flour surface.
-Bake the dough before adding desired toppings.
