Mid-Day Delish Dish- Quick Fix Burrito
So when I was preparing lunch today to take to work, I was thinking that its about time that I strayed away from the usual sandwich. So I decided to go with leftovers from the night before. I took bits and pieces of last nights dinner and made a superb lunch!
What I used:
Whole wheat tortilla
Fat-free refried beans
Black beans
Corn (canned)
Shredded Chedder cheese
Low-Fat sour cream
Taco Bell Mild Salsa
Lettuce
Lime
1. I microwaved the refried beans, cheese, corn and black beans together in a microwave safe dish.
2. I spread the sour cream and salsa on the bottom of the tortilla and added the heated bean mixture and lettuce.
3. Roll into the best burrito possible, then used a sliced lime to squeeze onto eat bite.
