“Carrot Cake is good for the eyes…and your tummy!”- Best Darn Carrot Cake
I figured that most of you are getting ready for a holiday party/dinner and thought that some of you might be looking for a good recipe to impress your family/guests with.  Well, this carrot cake recipe is by far the most superb!  My aunt and I made this cake this weekend, and it was gone in seconds! 
What you need:
1 lb carrots (shred the carrots yourself in the cuisinart)
2 cups sugar
1 1/2 cup corn oil/peanut oil
4 eggs
2 cups flour
2 tsp. baking powder
2 tsp. baking soda
1. Preheat oven to 325.  Peel and grate ~3 cups of carrots. Set aside.
2. Combine sugar and oil in electric mixer.  Add eggs, one at a time, beating well.  Add dry ingredients to egg mixture.  (Dry ingredients should be combined before adding to the egg mixture)  Then add carrots to mixture.
3. Lightly grease 3 nine inch can pans.  Line bottoms with circles of wax paper, then grease the top of the wax paper.  Pour batter equally into the 3 cake pans.
4. Bake for 45 minutes.  Cool on wire racks, then remove wax paper.
ICING Recipe:
Multiply x 1 1/2:
2 cups confectioners sugar
8 0z cream cheese (whipped is fluffier)
4 tbsp of butter (room temperature)
2 tsp. vanilla
1. Beat until creamy
2. Spread evenly on cake layers, then pile the layers.  Finally, spread the rest of the icing so it covers the entire cake.
*This is pretty much the most delish cake, my dad usually has about 3 huge pieces whenever its baked!
