“Fa La La La Falafal”- Pita Stuffed with Falafal and Homemade Hummus
In honor of my sisters trip to Israel this week, I decided to go middle eastern last night when I was making dinner for my family!  When I decided to make falafal last night, I thought to myself, “nothing goes better with falafal than some damn good homemade hummus”, so if you’re a hummus fan, get ready to make some great, very low in fat hummus!
What you need for the Falafal Sandwich:
Whole wheat pita
Falafal Mix (I use Osem brand, but any kind will do)
Cucumbers (chopped)
Tomatoes (chopped)
Hummus (recipe follows)
Feta Cheese (crumbled)
Set Oven to 400 degrees on convection
1. Make falafel mix according to package.  But instead of frying the falafel balls, grease a cookie sheet and roll the falafel into 1/2 inch balls and place on cookie sheet.  Lightly spray the falafel balls with Pam.  Place in oven until the outside of the falafels are crisp on the outside.
2. Cut the pita into halves.  Spread the hummus and then start adding the falafel, tomatoes, cucumbers and feta cheese.
Hummus Recipe:
2 cans of Chick peas (rinsed)
3 Cloves of garlic (minced)
Juice of 1 lemon
1 tsp cumin
Water
Fresh cracked pepper
1. Rinse chick peas then place in large bowl.  Add lemon juice, minced garlic and 4 tablespoons of water. 
2. Use a hand blender to combine the ingredients into a smooth spread.  You may need to add a little more water to get the desired consistency (or add more lemon juice if you like as well). 
3. Add about 1 tsp of cumin to the hummus and blend again.  Finish with a little bit of fresh cracked pepper.
*The hummus will stay good for a few days and is great on homemade pita chips, or sandwiches!
