“Out of this World”- Noodle Kugel
While I wish I could take credit for this amazing recipe, all of the credit should go to my Aunt Sue who makes the best noodle kugel….ever. But I have to say, I’m pretty good at recreating this delish, sweet noodle kugel!
Just to support that last statement, my 90 year old Aunt Ida called me last night and said, “Hello honey, I just wanted to call and tell you that your kugel was out of this world!”. Also, I made this kugel for a holiday party this weekend at my friend Becca’s and it was gone in a flash! So if you want to impress the fam or friends, or even just get your sweet noodle kugel fix,definitely try out this great recipe!
What you need:
Medium or wide egg noodles (16 oz) according to package directions
8 ounces cream cheese (or fat free)
1 pint of sour cream (or fat free)
½ pound margarine (or fat free)
1 cup sugar
5 eggs (or 10 egg whites)
1. Melt cream cheese, sour cream, margarine and sugar over low heat until smooth.
2. Beat eggs and add to the mixture. Again, beat until smooth. Add noodles.
3. Pour into greased 9x13 pan. Cover with plastic wrap and refrigerate or freeze over night.
Before baking, top with the following mixture:
1 cup crushed corn flakes (sometimes I use frosted flakes J)
¼ cup sugar *I usually double this quantity and use half sugar and half brown sugar)
1/8 pound melted margarine
Bake at 350 degrees for 40 minutes
*I really like the crunchy topping so I sometimes add a little more crushed corn flakes to make sure theres a lot of crunchy goodness covering the entire kugel.
**This also freezes wonderfully!
***If you’re adding the eggs to the warm mixture, make sure to stir the butter/cream cheese mixture while you pour the eggs, or else it will cook the eggs!
