“Fruity-licious Fruit Tart”
As some of you may know by now, my family and I have a huge chocolate obsession.  Some of us actually consider chocolate a main food group.  But sometimes, I’m in the mood for a more refreshing, lighter dessert.  My Aunt Sue, one of my mentors in the kitchen, has one of the best fruit tart recipes! 
This dessert will definitely be a hit with your friends and family if they aren’t big on chocolate.
What you need:
Short bread cookies (Pecan Sandies work well- only 2 rows of cookies)
1/2 Cup Melted Butter
8 oz Strawberry Neufchatel Cheese* (1/3 less fat than other Cream cheese)
3 Tbsp. Creme de Cassis (optional)
3 Tbsp. Sugar
1/2 Cup Heavy Cream
1/4 Cup raspberry jam
Fresh berries/fruit (sliced)
Set oven to 425 degrees
1. Crush 2 rows of  shortbread cookies.  This is accomplished most easily in a Cusiinart. Add 1/2 stick melted butter. Press into tart pan.  Bake 8-10 min. 
2. While baking, combine Strawberry Neufchatel cheese with 3 tbsp. sugar, 3 tbsp. crème de cassis, ½ c. heavy cream and ¼ c. raspberry jam in a medium mixing bowl.. 
3. When crust is done and cooled, spread with above mixture.  Then arrange any variety of pretty colorful fruit artistically.   
*If your grocery store does not carry the Strawberry Neufchatel, you can just buy any type of strawberry cream cheese.
**This is best made day of serving or night prior.
