“Cute as a button mushroom Pizza”- Pizza with Carmelized Onions and Mushrooms
To welcome the New Year and end my brothers vacation from college, we had one of my brother’s friends family over for dinner and game night. Now in order to have my A-game, good food is a must! So my me, my dad and my sous chef Lisa made a bunch of homemade pizza pies. This mushroom, onion and mozzarella pie was a big hit. Hope you enjoy!
What you need:
Pizza Dough (store bought or homemade- see my earlier pizza dough post)
1 small yellow onion
1 small purple onion
1 pkg. button mushrooms (or baby bellas)
Sliced Buffalo Mozzarella (I used the small balls of buffalo mozz)
1/4 cup shaved parmesean
3/4 tbps. sugar
Set oven to 400 degrees.
1. Roll out pizza dough to desired size and thickness. Place on pizza stone or greased tray and place in oven.
2. Slice onions and toss into greased sautee pan. While onions are cooking, wash, dry and slice mushrooms. Add to onions. Then add about 3/4 Tbsp. of sugar to sautee pan. Stir and place heat on low. Cover. Keep checking on mixture to make sure it isn’t burning. (Onions should become soft and brownish in color)
3. Remove pizza dough from oven when it seems to be a bit crisp on the outside, but not completely done. Add onion/mushroom mixture.
4. Place sliced mozzarella pieces around the pizza. You do not need much mozzarella because it will melt and cover large areas. Add shaved parm.
5. Place in oven until the mozzarella is completely melted.
*Pizza stones are a great investment if you’re looking for a really nice crispy pizza bottom
