“…and Delish Helped”
I want to send a giant thank you out to a Delish Your Dish follower, Emily, for sending me a picture of her latest dish.  Emily took my advice and bought Pete’s Tofu 2 Go.  She also used my suggestions of adding the tofu to couscous!  The dish looks great!  I’m so glad you enjoyed the tofu suggestion! 
Here’s how Emily made her dish:
First, I cut 2 large zuchinni very thinly, and then cut those pieces in half so they were smaller.
Then, I sauteed the zucchini with some cooking spray and a small amount of olive oil.  I put the olive oil and the cooking spray in the pan on high heat and then dumped the zucchini in to crisp the outside, and then after about 1 minute, I turned the heat down to medium-low to medium.  I cooked it for about 10 more minutes until it was soft, but it was still crispy from when I first threw it in.
At the same time the zucchini was cooking, I made the couscous.  I used the “Near East - Toasted Pinenut Couscous”
Then, I cut up one of the packets (4 slices) of “pete’s tofu 2 go - sesame ginger flavor into bite sized pieces. 
Finally, I threw in the couscous and tofu (with the sauce) with the zucchini and mixed it all together.
