“Delished Dish”- Garlic Smashed Potato and Cauliflower Pancakes with Curry Sour Cream
Last week I asked you to challenge me to create a delish dish with items in your fridge. SarahLuz sent me a list of items in her fridge she wanted to use, the items consisted of: cauliflower, pasta, parm cheese, two russet and one red potato, onions, garlic. So in order to help her out, I decided to experiment and make a garlic smashed potato and cauliflower pancake with a curry sour cream for dipping. It was great!!! Hope you enjoy!
What you need:
1 head of cauliflower
3 Potatoes
1/2 cup Chopped onions
1 1/2 tbsp of minced garlic
Salt/Pepper
1/4-1/2 cup of light sour cream (plus additional for dipping sauce)
2 tbsp. butter
2 egg whites
Curry Powder
Parmesan Cheese
Asiago Cheese (optional)
Set Oven to 400 degrees on convection.
1. Cook potatoes so they are soft enough to mash (you can boil/microwave them). Meanwhile, steam cauliflower so that it is soft and cooked all the way through.
2. Do a rough mash of the cauliflower on a plate. Do not turn it into mush.

3. When potatoes are done, mash them in a bowl with the butter, sour cream, salt/pepper, garlic, egg whites, onions, parmesan and asiago cheeses. Then fold in the cauliflower.


4. Form the mixture into patties on a greased cookie sheet. Spray the tops of the pancakes with PAM. Place in oven until they begin to crisp, then flip and return to oven.
5. Meanwhile, pour sour cream and desired amount of curry powder into a dipping bowl. Stir and serve along side hot pancakes.
*These will freeze beautifully and great for a snack or appetizer!
