“OH Crepe!”- Whole Wheat Crepe filled with Fruit and Sweet Cream Cheese topped with Mixed Berry and Banana Syrup
I bet you wish you were in my house this morning for breakfast! I decided to whip out the old crepe maker and fool around with a few ideas I had. I thought I’d start the day off with a sweet crepe filled with fresh berries, sweetened cream cheese and topped with a fresh mixed berry and banana, and of course powdered sugar! Mouth watering yet?
What you need:
Whole wheat flour
2 eggs
1 tbsp butter (melted)
1/2 cup milk
1/2 cup water
1/2 tsp salt
1 tbsp sugar (optional- I added it for a sweeter flavor)
1/2 tsp Vanilla extract
Strawberries (sliced)
Bananas (sliced)
Blueberries (sliced)
Maple syrup
Powdered sugar (optional)
Whipped Cream Cheese
Sugar (additional for cream cheese mixture)
1. Heat crepe maker. Meanwhile, combine flour, eggs, milk water, salt, sugar and butter.
2. While pan or crepe maker is heating. Slice the berries and bananas. Be sure to leave some extra for the sauce. Next, take whipped cream cheese and add about 1 tbsp of sugar (depending upon how much you’re making).
3. Next, pour the batter onto a well greased pan. It will begin to bubble on top, then flip the crepe over to cook the other side.
4. Mix the cream cheese, berries and banana together. Spread mixture on one side of the crepe, then roll into a tube.

5. Make syrup by adding the berries, bananas and 1/4 cup of maple syrup into a microwave dish (measuring cup works best). Heat in microwave for 1 1/2 minutes. Stir to combine.
6. Pour hot syrup on top of crepe then dust with powdered sugar!

*For those of you who do not have a crepe maker, you can use a griddle or pan, just be sure to make the batter a little thinner with milk or water.
**Obviously this is a very sweet breakfast to have, or you can use as a dessert. It only took about 15-20 minutes from start to finish! Enjoy!
