“Once You Go Blondie, You Never Go Back”- Banana Walnut Blondie with Fresh Blueberry Whipped Cream
So last night I was rummaging through my fridge trying to figure out what needed to be used.  I came across a banana and some blueberries and I got to thinking.  My family noted that they were in the mood for something sweet, so I quickly started going through my recipe books.  I remembered seeing a Blondie recipe on how to cook everything, and I tried to figure out how to incorporate my fruits that I wanted to use up.  A banana walnut blondie with blueberry whipped cream was the outcome..and it was damn good!
What you need: (This is half of the original recipe- double everything for thicker Blondies)
For the Blondies:
1/2 Cup Whole wheat flour (or all-purpose flour)
1/2 Cup packed brown sugar
1/2 egg
1/2 stick of butter
1/4 Tsp Vanilla Extract
1 ripe banana
Pinch of salt
Handfull of chopped walnuts
For the whipped cream:
1/2-1 cup whipping cream
1/4-1/2 cup powdered sugar
1/4 tsp vanilla extract
Small handfull of blueberries
Set oven to 350 degrees and Grease an 8x8 pan
1. Melt butter in microwave.  In a mixing bowl, combine brown sugar, melted butter, and banana.  Mix well and banana should be mushed within the mixture.
2. Next, add the egg, salt, walnuts, flour and vanilla extract.  Mix well.
3. Pour into greased pan and bake for 15-20 minutes, or until fully cooked (use a toothpick to check if it is done in the middle.
4. Let cool and set aside.  Meanwhile, in a small mixing bowl add the whipping cream, blueberries, powdered sugar and vanilla.  Use a hand mixer to whip the cream into desired consistancy.
5. Add the whipped cream to the cooled Blondie.  To make a design, add whipped cream to ziploc bag and snip off the corner.  This way to can pipe the cream into any type of design.  Finish by sprinkling fresh blueberries around the dessert.
