“Wanna be a Meat-baller…shot caller”- Veggie Meatball Sandwich
Oooh! I am so excited for my lunch today!  Last night I tried out some new Vegetarian meatballs that I found in Whole Foods.  I buy the frozen eggplant cutlets from this company and then yesterday I saw that they started making vegetarian eggplant meatballs!  They are soooo good!  Since last night I had spaghetti with veggie meatballs, I decided to use the leftover meatballs to make a meatball sub today!!  Anyone care to join me?!?
What you need:
Dominex Vegetarian Eggplant Meatballs
Tomato Sauce
French Bread/Hogie (I prefer wheat, but only had white bread in the house)
Mozzarella Cheese
Parmesan Cheese
Hot Pepper Flakes (optional)
1. Heat meatballs, tomato sauce and mozzarella in microwave or oven (oven will give the meatballs a crunchy texture).
2. Meanwhile, toast the french bread in the toaster until it crisps lightly.
3. Add the meatballs to the bread and top with parmesan cheese and hot pepper flakes.
4. Place back in the oven just for a few more minutes.

*Also make sure to try out the Dominex brand eggplant cutlets, they’re amazing!
