“Micki’s Mandel Bread”- My Grandma Micki’s Super Chocolate Chunk Mandel Bread
So when I was younger, my Grandma Micki made the BEST mandel bread! It always had huge chunks of chocolate and always had the perfect crunch to it. My grandma hasn’t been feeling well lately, so in order to cheer her up, I decided to make her a big batch of her very own mandel bread!
What you need:
4 eggs
4 cups flour
1 tsp vanilla extract
1 tsp almond extract
1 cup canola oil
1 cup sugar
3 tsp baking powder
cinnamon sugar (to sprinkle on top)
1 bag of chocolate chunks or large chocolate chips
Set oven to 350 degrees
1. Combine all ingredients in a large mixing bowl. Be sure to add the chocolate chips last and fold into the mixture.
2. On a greased cookie sheet. Mold the batter into 2 logs. Flatten the tops of the logs just slightly. Sprinkle the tops of the logs with cinnamon sugar.
3. Bake the dough for 40 minutes. Then remove from oven and slice into desired thickness. Spread the cookies out on the cookie sheet then place back in the oven until desired crisp has been reached.
*Store in an air tight container
