“Mr. Potato..Boats”- Garlic Parmesan and Truffle Oil Stuffed Potatoes
As most of you know, I have been on a total garlic kick since I got hooked on the Garlic Joy spreadable garlic product. This recipe is a quick and easy side dish to go with any dinner .
What you need:
4 small potatoes
Garlic Joy spreadable garlic (or you can use fresh garlic cloves)
Grated Parmesan Cheese
Shredded Mozzarella Cheese
Tomatoes (sliced)
Arugala (optional)
Truffle Oil (optional)
Heat oven to 400 degrees.
1. Cook potatoes in microwave/oven until they are fully cooked. Then slice the potatoes in half lengthwise. Using a fork carefully mash up in the inside of the potato without breaking the potato skin.
2. Add about 1tsp of Garlic joy to each potato half. Sprinkle the parmesan, mozzarella and add just a touch of truffle oil. Mix it together inside eat potato boat.
3. Add a slice of tomato to eat potato boat and place back in the oven. Heat in oven for about 10-15 minutes.
4. Remove from oven and top with fresh arugala.
*I grow fresh arugala in my backyard. I love being able to go out back and pick the fresh arugala!
