“Slammin’ Sammy”- Veggie Sandwich with Chipotle Garlic Hummus
I love sandwiches! No, I seriously love sandwiches to the point where I could probably have it for every single meal.  So when I came home from a grueling crossfit workout on Saturday, I was definitely in the mood to reward myself with a fave food of mine.  Here are two sandwiches that I shared with Lisa, my sous chef and fellow crossfitter, on Saturday.
What You Need:
Baguette (Whole-Wheat preferred)
Cheese (I use Jarlsberg Lite- its low in fat and calories)
Chickpeas
Garlic Joy Chipotle flavor (Or fresh garlic)
Fresh Spinach and Arugala
Sliced Tomatoes
Sliced Avocado
Grilled Veggies (optional)
Balsamic Vinegar (optional)
1. To make hummus, puree the chickpeas with 1 tbsp of Garlic Joy Chipotle flavor with 1 tbsp of lemon juice and a drop of water.  Set aside.
2. Spread hummus on sandwich then top with the cheese, spinach, arugala, tomato, avocado, balsamic, grilled veggies.
*I used leftover grilled veggies from the night before to make this sandwich.  But you could easily grill up some onions, mushrooms and zucchini.
**The Jarlsberg Lite cheese tastes like Swiss but has much less calories and fat.  I also make sure they slice it extra thin.  No need to have thick slices of cheese that would only add extra calories to your meal.
