“Knock it off, Napoleon! Make yourself a dang Quesadilla!”- Grilled Veggie Quesadilla
Okay, so we all know I love food. But, since I was little I have always been a huge fan of Mexican/Tex-mex. I remember always wanting to work at Taco Viva (which seriously was the BEST mexican place ever). Unfortunately they went out of business years and years ago. But, anywho I’ve always loved cooking Mexican/Tex-mex food, so last night I made a quick grilled veggie quesadilla.
What you need:
Whole Wheat tortillas
Fat Free Refried Beans
Asparagus
Sliced Onion (I used a yellow onion)
Chik Strips (I used Morningstar Farms)
Mexi Cheese
Salsa/Sour Cream/Guacamole to garnish
1. Steam asparagus in the microwave for about 2 1/2 minutes. Place sliced onion and asparagus on a heated grill pan. Squeeze some fresh lime juice on the veggies while they cook. Cook the veggies to your desired taste.
2. Heat refried beans in the microwave or oven. Set Aside. Meanwhile, steam the tortillas in the microwave in a paper towel for about 30 seconds. Also, cook the Chik strips according to the package, then set aside.
3. Take steamed tortilla and spread the beans across the bottom. Layer with the Chik Strips, veggies and cheese. Fold the quesadilla over and place on a heated grill pan. Cook on both sides until the quesadilla is crispy and shows some good grill lines.
4. Serve with a salad and garnish with fresh guacamole, sour cream and salsa.
*It would also be great to serve this with the Morningstar farms crumbles or even some veggie meatballs!
