“Strawberry Pancakes Forever”- Stawberry Pancakes with a sweet Strawberry Mousse
While I was figuring out what to make this morning, I thought about my buddies from Be Organic and the amazing Mango Mousse that they make.  Unfortunately, I didn’t have any mangoes in the house this morning, so instead I made a strawberry mousse that was delish and the pefect topping to my strawberry pancakes!  Ok, so its not the healthiest breakfast but I deserve to splurge every now and then.
What you need:
1 Mango or about 5 Strawberries
1 pint of heavy whipping cream
2 teaspoons of vanilla extract
3 teaspoons of lime juice (I cut this in half for my recipe)
3 tablespoons of sugar
1. Peel mango (or wash and slice stawberries).  Place the fruit into a blender with the vanilla extract and lime juice.  Blend until smooth.
2. Next, blend in the sugar.  Then add the whipping cream to the blender and blend until it is smooth and creamy.
3. Pour the mixture into a bowl and chill for about 30 minutes.

*For my pancakes this morning, I just placed a dollop of the mousse right onto the pancake after it was done blending- but for the real deal, definitely put it in the fridge to chill.
