“It’s All Greek To Me”- Spinach Pie with Phyllo Dough
Since Christmas time, I’ve had leftover phyllo dough staring at me everytime I opened the freezer.  So in an effort to gain a little more space in the freezer, I decided that it was time to try out a spinach pie recipe I had been formulating in my head.  Turned out to be one incredible spinach pie!
What You Need: (Not every measurement is exact- season to taste)
1 roll of phyllo dough
1 lb spinach (cooked and drained well)
1/2 Large yellow onion (diced)
1 handfull mushrooms (washed)
1/2 Cup ricotta
1/4-1/2 Cup feta cheese
1/2 block of tofu (drained well and chopped)
1 Tbsp Minced Garlic
3 Egg whites
Thyme
Dill
Salt/Pepper
Onion Powder
Garlic Salt
Pinch of Herbs
Roasted Sesame Seeds (Optional)
Heat Oven to 350 degrees.  Thaw phyllo dough if it was in the freezer.
1. In a large greased sautee pan, cook onions and garlic until onions have become almost clear.  Then add the chopped tofu and mushrooms to the pan.  Cook until the mushrooms have been fully cooked.

2. Next, add the cooked spinach to the pan.  Season with garlic salt, onion powder, dill, thyme, pinch of herbs, salt and pepper.  Experiment with the flavors by adding a dash of each seasoning at a time.

3. Then add the ricotta cheese and feta into the spinach mixture.  Make sure to incorporate all of the ingredients together.  Taste mixture to ensure that it is seasoned well.  Then stir in the 3 egg whites to the mixture.  Set aside.
4. Next, spray the bottom of a casserole dish with PAM.  Lay one sheet of phyllo on the bottom of the pan and spray with PAM (or brush with Olive Oil).  Repeat this until you have about 6-7 sheets of phyllo dough.
5. Then, add the spinach mixture on top of the phyllo dough.  Spread evenly.  Next, repeat the phyllo dough steps by laying a piece of phyllo dough, then spraying with PAM.  You should have about 6-8 sheets of phyllo dough on top of the spinach mixture.  Spray top layer with PAM then sprinkle with roasted sesame seeds.
6. Place in oven for about 30-45 minutes.  Top should be a golden brown.
