“Pita Pizazz” White Truffle Oil, Mushroom and Mozzarella Pita Flatbread
This weekend I had the pleasure of attending the Metropolitan Cooking and Entertaining Show.  I spent hours meeting with different companies and sampling their amazing products.  One company I came across was Bistro Blends Orlando.  This company has a fantastic array of flavored oils, balsamic vinegar and much more.  I bought a variety of oils and balsamics that included Fig Balsamic and White Truffle Oil.  So last night I got to experimenting with my new products.
What You Need:
Pita Bread (or you can use pizza dough)
White Truffle Oil
Sliced Mushrooms
Dried Rosemary
1 Tomato Chopped
Balsamic Vinegar
Dried Basil
Parmesan Cheese
Mozzarella Cheese
Set Oven to 350 degrees
1. Using a brush, lightly coat the pita bread with the white truffle oil.  Then cover the bread with the sliced mushrooms.

2. Next, top the mushrooms with the shredded mozzarella cheese and then sprinkle with the dried rosemary.  Then place the pita in the oven until the mushrooms have dried out a bit and the cheese has melted.
3. Meanwhile, place the chopped tomato in the small bowl.  Coat with about 1/2 cup of balsamic vinegar (depends on size of tomato).  Then add basil to taste.  Finally, add some parmesan cheese and mix together.  Place in fridge to chill before serving.
4. Remove pita from oven and slice.  Serve with chilled brushchetta.

*I also bought a Basil Garlic Parmesan oil from Bistro Blends that I used on another pita.  It was awesome!  Definitely check out Bistro Blends products online.  You can easily order tons of different flavored oils and balsamics that are must-haves in your kitchen!  I have four different flavors in my house now and I’m already thinking about my next order.  Awesome stuff check it out!
