“Wannabe-No not the Spice Girls Song” Ravioli and Veggie Wannabe Lasagna
Who needs lasagna noodles when you can create a wannabe lasagna with layers of zucchini, eggplant, mushrooms, ravioli and tomato sauce that will have you licking the plate?
What You Need:
3 Large Zucchini (sliced lengthwise 1/2” thick)
1 Large Eggplant (sliced lengthwise 1/2” thick)
1 Jar of La Famiglia Delgrosso Sunday Marinara (Absolutely the Best Sauce)
Mozzarella Cheese
1 bag of Light Ravioli
Set Oven to 400 degrees
1. Cook ravioli according to package and set aside.  Then steam the eggplant and zucchini in the microwave until tender.
2. In a oven safe pan, coat the bottom of the pan with a thin layer of tomato sauce.  Lay the zucchini across the bottom then top with tomato sauce and mozzarella cheese.  Then add a layer of ravioli.  Then top with tomato sauce.  Next, add a layer of eggplant and top with tomato sauce and cheese.

3. Repeat the zucchini, ravioli and eggplant layers until the layers reach the top of the pan.

4. Place the dish in the oven for about 20-25 minutes or until most of the liquid has boiled off.

*La Famiglia Delgrosso is by far one of the best jar tomato sauces I’ve ever had.  Stay tuned for more information!
